Rolled up Chicken

My version of a Rolled up Chicken.


Not exactly another healthy dinner option but as always quick and easy.

Ingredients:

1/2 Stick of Butter (Am I turning into Paula Deen? - Hmmm)

2 Sticks of string cheese

Parsley

EVOO

Garlic/Onion Powder (To Taste)

Salt/Pepper (To Taste) 

Minced Garlic

Skewers or toothpicks



PREHEAT OVEN TO 400*

1. Take a cookie sheet, casserole dish (whatever works for you) and add EVOO (extra virgin olive oil).

2. Add Chicken to the pan and sprinkle seasonings (garlic/onion, salt/pepper, parsley, garlic, a piece of butter, tomatoes (thanks Mom and Sonya) and a piece of cheese) on each piece of chicken.


3. Use skewers or tooth picks to stick in the chicken at the top to hold the cheese and butter in.

4. Cook for about 25 min. Let cool, eat & enjoy!

Easy right? You can also add a side, we used our left over pasta (that's whats great about cooking a little extra) just re-heat and serve!

Oh and Ben added this to the list of "keepers" so it comes highly recommended ;).

Saltine Toffee Cookies

Chocolate <3

A weekend away with the family means the beach, drinks and of course LOTS of eating.

I thought I'd bring one of my favorite desserts of all time:

Saltine Toffee Cookies. Oh.they.are.sooo.good.

Ingredients





Step 1: Line the bottom of the pan with parchment paper (or just grease it). It's easier clean-up with parchment paper. Then line up saltines along the bottom of the pan.

Step 2: Boil Brown sugar and Butter in a sauce pan. Pour on top of the saltine crackers.

Step 3: Put step 2 in the oven (without the chocolate chips) for about 5-10 minutes and then remove from the oven. While on the stove top add the chocolate chips and let melt. I added mine back to the oven to speed up the melting time.

Step 4: Take a spatula and spread out the chocolate. I chose to add pecans to half the batch.

Step 5: Then let cool and break apart. Feel free to stick in the freezer if you need them faster.

Crock Pot Bacon Ranch Mac&Cheese Chicken

The title says it all (Bacon.Ranch.Mac&Cheese.Chicken). It even included an almost 4 mile run, just to prepare. If you don't make it... Your just not living ;)

4 Boneless Skinless Chicken Breasts
2 Tbsp Real Bacon Bits (Cook in pan then cut up and add to mix)
1 Tsp Minced Garlic (I used Garlic Powder)
1 Pkg Ranch Dressing Mix
1 Can Cream of Mushroom Soup
1 Cup Sour Cream
1/2 Box of Pasta (I used elbow pasta)
1 Package of Shredded Italian Blend Cheese
1/2 Cup of Parmesan Cheese



Directions:

Lightly grease crock pot (or use a liner) and add the chicken. Combine bacon, garlic, ranch dressing mix, soup, and sour cream in a bowl; mix well. Pour over chicken in the crock pot. Add the shredded Cheese and then another layer of Parmesan Cheese. Cook on high 3-4 hours. Cook the pasta separate about 10 minutes before the chicken has cooked. Add the crock pot ingredients and pasta together and enjoy!

Baked Garlic Chicken

Simple. Fast. Yummy.

That's really all you need to know...


Besides how to make it of course:

Ingredients:
4 Chicken Breasts
4 Garlic Cloves Minced (Buy already minced - it's easier)
4 Tablespoons of Brown Sugar
3 Teaspoons of Olive Oil

(If you have more chicken just double the recipe)

1. Preheat the oven to 500 degrees (that's what the original recipe said!)
You could always do 400 and just cook it for 5-10 minutes longer.

2. Lightly grease a casserole dish or cookie sheet.

3. In a saute pan add the oil with garlic and simmer (5-8 min)

4. Remove garlic and oil from heat

5. Add in brown sugar - stir

6. Add chicken to the pan (casserole dish or cookie dish) then add the mixture. Please note: I just smeared mine on top. Feel free to add it to the chicken whichever way works best for you.

7. Add salt and pepper.

Bake for 15-30 depending on your oven.

I also made brown rice as a side. I just followed the package directions.

What's Better Than a Chocolate-Chip Cookie?


.....A Chocolate Chip Cookie with Cookie Dough sandwiched in between!

Ingredients:

For Cookies:

3/4 cup unsalted butter, room temperature
2/3 cup granulated sugar
2/3 cup light brown sugar, packed
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups mini semisweet chocolate chips


For Cookie Dough:

1/2 cup unsalted butter, room temperature
1/2 cup light brown sugar, packed
1/4 cup all-purpose flour
1/2 cup powdered sugar
1/4 teaspoon salt
1/4 cup heavy cream
1 teaspoon vanilla extract
1/2 cup mini semisweet chocolate chips

Seasoned Pork Cutlets


I had big plans for my seasoned pork cutlets. They were going to be dipped in eggs, flour and Italian bread crumbs until I realized that I didn't have Italian bread crumbs. (Whomp Whomp...) It was too late and I was too tired to run to the store. 


......... so ........ I settled on a steak rub, salt, pepper and a little EVOO (enough to taste). I pan fried them *about 6-8 min on each side and then served them with a sweet potato. It was easy and quick and some days that's all I have in me.

Surprise Dessert


Okay, so I haven't been the best at blogging. I've been re-creating a lot of the same recipes I blogged previously, so I ran out of ideas. Then it hit me, why not do a different dessert, "Pinterest style?"

Bring on the GIANT COOKIE BROWNIE!

Okay, I'm pretty sure Betty Crocker has a box mix for the "cookie-brownie" but I wanted to re-create it and make it GIANT. Yup, "Go Big or Go Home" ;)

Here it is:

Brownie Mix
Cookie Mix
Pie Pan
Butter

1. Butter the bottom of your pie pan so the brownie doesn't stick.

2. Mix the brownie mix and pour it on the bottom of the pan as your base.

3. Mix the Cookie mix and add it to the top.
 Please Note:   I have to blog about both successes and failures. This wasn't a total success. I added more water to the brownie mix than I should have and the cookie mix fell a bit short (you can see below). Basically the idea is that the cookie covers the brownie mix, making the top layer of the pie a cookie and the bottom a brownie. Mine looked like a calico version of that.

4. With every failure comes some success. I don't know what that even means but it sounded good in my head. Basically I mean it still tasted really good! That's all that really matters..right?

Grilling Out



Here's an easy one!

Grilling a steak...


Heat up the grill..


Throw the steaks on, butter them up, and add a seasoning. You can see we used McCormick. Yum!

We decided to eat outside, but the bugs weren't being nice. Even with the candle-of-death (citronella).


Hope you get out and grill too! That's what the summers all about after all :).

I figured the picture below is an interesting way of explaining how long to leave the steak on the grill:

Touch your palm, basically the last one (darker on the inside-well done) its tougher than if it's rare (red-not tough). Common sense right?


Or you can go by time, we basically just cooked it for 4-5 minutes each side. However, you can always cut into it and put it back on the grill if it's not cooked the way you like it.

Stayed tuned for our ribs blog. I wish there was an option for tasting and not just reading. Do you ever watch cooking shows where they taste the food and say, "I really wish you were here to try this but mmmmmmm trust me its good" What a tease!

Melt in your Mouth Chicken


This is an old one, but I forgot to post (yes I realize no one cares). Since I have extra time today I figured I'd finish it.


This is called "Melt in your Mouth Chicken" and it was amazing!

* UPDATE * Make sure to use Real MAYO and NOT Miracle Whip. It does NOT taste the same! 


Ingredients:

4 boneless chicken breast halves
1 cup mayonnaise
1/2 cup freshly grated parmesan cheese
1 1/2 teaspoons seasoning salt
1/2 teaspoon ground black pepper
1 teaspoon garlic powder
 Mix all ingredients in a large bowl (not including the chicken):
It doesn't look yummy but it will be!




Then coat the chicken and bake in the oven at 375 for 45 minutes:
