I had big plans for my seasoned pork cutlets. They were going to be dipped in eggs, flour and Italian bread crumbs until I realized that I didn't have Italian bread crumbs. (Whomp Whomp...) It was too late and I was too tired to run to the store.
......... so ........ I settled on a steak rub, salt, pepper and a little EVOO (enough to taste). I pan fried them *about 6-8 min on each side and then served them with a sweet potato. It was easy and quick and some days that's all I have in me.
